We’re seeking a Kitchen Manager who is passionate about food, leadership, and teamwork. The ideal candidate will bring experience in high-volume kitchen operations, staff development, and maintaining the highest standards of quality and efficiency.
Position Overview
The Kitchen Manager oversees all back-of-house operations, including food production, quality control, staff management, budgeting, and sanitation. This position requires hands-on leadership, ensuring a positive work environment and exceptional food experience for our guests. The Kitchen Manager works closely with Ownership, the Restaurant Manager, and the Bakery Manager to maintain consistent standards and operational success across all departments.
Key Responsibilities
Leadership & Operations
• Supervise, coach, and develop kitchen staff while maintaining morale and teamwork.
• Oversee all aspects of daily food production, presentation, and quality.
• Maintain proper food cost controls, purchasing, and inventory management.
• Implement and monitor all kitchen policies, safety standards, and sanitation procedures.
• Lead by example during peak service times and ensure smooth communication with FOH staff.
• Maintain visibility and availability during busy hours and special events.
• Participate in hiring, training, and scheduling kitchen staff.
• Conduct performance evaluations and disciplinary actions professionally.
• Foster a positive, motivating environment that encourages growth and accountability.
Service & Food Quality
• Ensure all dishes meet timing, presentation, and taste standards.
• Uphold proprietary recipes, portion standards, and consistent plating.
• Oversee food rotation, storage, and prep levels to prevent waste and shortages.
• Support a clean plate and glass washing system, ensuring efficient service.
Profitability & Cost Control
• Manage and analyze kitchen budgets and expenses.
• Accurately report bi-weekly kitchen costs and variances.
• Coordinate and execute inventory counts, purchasing, and supplier relationships.
• Develop strategies for efficiency and profitability while maintaining quality.
Facility & Safety
• Oversee preventive maintenance and cleanliness of all kitchen equipment.
• Hold staff accountable for health and safety compliance.
• Maintain accurate records of warranties and service agreements.
Communication & Reporting
• Conduct pre-shift meetings and maintain clear communication with all departments.
• Collaborate with Ownership on staff development, policies, and improvements.
• Promote and apply the Antrim Truck Stop business vision in all guest and employee interactions.
Qualifications
• Minimum 3–5 years of experience as a Kitchen Manager or similar leadership role.
• Proven ability to manage a fast-paced kitchen and lead a large team.
• Strong understanding of food costing, scheduling, and inventory control.
• Exceptional communication, organizational, and leadership skills.
• Red Seal certification or equivalent culinary training is considered an asset.
• Flexibility to work weekends, holidays, and early mornings as required.
Schedule
40–50 hours per week
Schedule dependent on business needs
Hours of operation: 5 AM – 9 PM, 7 days a week
Weekends and holidays are required
